Cila's Carrot Cake


Yield: 2 Loaves

Preheat oven to 350 degrees.

Sift together (twice) the whole wheat flour, white flour, salt, baking soda, allspice and ground cinnamon. Set aside.

In a large bowl, beat the butter, brown sugar (or honey). Begin with the sugar (or honey) and butter, and then add eggs one at a time. Add the eggs, vanilla and lemon. Beat till light in color.

Add flour mix and grated carrots alternately to butter mixture beginning and ending with flour (flour-carrot-carrot-flour) after each addition mix gently to combine but do not beat or cake gets tough. Add nuts and raisins last. Butter 2 loaf pans and divide batter and bake in 350°oven-40-50 minutes.

Slice and serve.
